Egg Masala Toast (Spicy Egg and Vegetable Toast)
This vegetable french toast can easily be made with any vegetables you have on hand—whether it’s tomatoes, spinach, or mushrooms, it can be adapted to your taste! Adding a little cheese in the mixture or sprinkling some over the top will bring in a rich, creamy texture, making it even more indulgent. It’s a versatile dish that can cater to both savory and slightly sweet preferences, depending on how you decide to season it. Perfect for a hearty breakfast or an easy evening snack!
Ingredients:
Eggs: 4
Milk: ¼ cup
Salt: to taste
Bread slices: 6
Oil or butter: for greasing the pan
Red chili powder: ½ teaspoon
Black pepper powder: ½ teaspoon
Onion: 1, chopped
Green chilies: 2, chopped
Mixed vegetables (optional, e.g., bell peppers, peas, carrots): ½ cup, chopped
Instructions:

1.Prepare the egg mixture:
In a mixing bowl, whisk together the eggs, milk, salt, red chili powder, black pepper powder, and chopped onion. If you’re adding mixed vegetables, fold them into the egg mixture at this stage.
2.Heat the pan:
Preheat a non-stick pan over medium heat and spray with oil or grease with butter.

3.Soak the bread:
Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on both sides. Ensure the bread is well-coated but not overly soggy.
4.Cook the toast:
Place the soaked bread slices in the heated pan. Cook until golden brown on one side (about 2-3 minutes), then flip and cook until the other side is golden brown.

5.Serve hot:
Once both sides are cooked to a golden brown, remove from the pan and serve hot. You can garnish with fresh coriander or serve with ketchup or a side salad.
