Aloo Tikki
This recipe reminds me of rainy evenings when we’d make tikkis together as a family, sitting around the kitchen with the aroma of spices filling the air. These crispy tikkis paired with refreshing chutneys make the perfect snack, whether it’s for a casual get-together or an indulgent treat on a cozy evening.
Ingredients:
4 large potatoes, boiled and mashed
½ cup peas, boiled (about 4 tablespoons)
4 tablespoons corn flour
1 tablespoon ginger, grated
2 tablespoons coriander leaves, chopped
1-2 green chilies, finely chopped
1 teaspoon garam masala
1 teaspoon red chili powder
1 teaspoon lemon juice or aam panna (raw mango juice)
1 teaspoon chaat masala
Salt, to taste
½ teaspoon sugar (optional)
Oil, for frying
Instructions:

1.Prepare the Mixture:
In a large bowl, combine the mashed potatoes, boiled peas, corn flour, grated ginger, chopped coriander leaves, chopped green chilies, garam masala, red chili powder, lemon juice, chaat masala, salt, and sugar (if using). Mix everything well until you have a uniform mixture.
2.Shape the Tikkis:
Take a portion of the mixture and shape it into a ball. Flatten it with your palm to form a tikki (patty). Repeat with the remaining mixture.

3.Cook the Tikkis:
Heat oil in a tawa or flat-bottomed pan over medium heat. Once the oil is hot, add the tikkis to the pan. Cook until they are golden brown and crispy on both sides, about 4-5 minutes per side.

4.Serve:
Serve hot with curd, green chutney, and tamarind chutney for a delicious chaat-style snack.
