Chicken Kebab
Chicken Kebabs always remind me of cozy family dinners where everyone would sneak a piece straight off the tawa. To make these extra special, I like adding a hint of smoked paprika for that char-grilled flavor, even when pan-fried. My little trick is using a mix of amchoor and lemon juice for the perfect tangy balance—it’s a hit every single time!
Ingredients:
Minced chicken – 400-450g
Egg – 1
Besan (chickpea flour) – 1 cup
Green chilies – 2-3, finely chopped
Onion – 1, finely chopped
Ginger paste – 1 tablespoon
Garlic paste – 1 tablespoon
Salt – to taste
Red chili powder – 1 teaspoon
Garam masala – 1 teaspoon
Coriander powder – 1 teaspoon
Amchoor (dry mango powder) – 1 tablespoon (or substitute with lemon juice)
Instructions:
1.Cook the Chicken
Heat a small amount of oil in a pan, add the minced chicken, and cook with a pinch of salt until it is no longer pink. Allow it to cool slightly.
2.Prepare the Mixture
In a mixing bowl, combine the cooked chicken, besan, egg, red chili powder, garam masala, coriander powder, amchoor, and additional salt as needed. Use a mixer if necessary to blend the ingredients thoroughly.
3.Add Fresh Ingredients
Once well-mixed, fold in the chopped onions, green chilies, ginger paste, and garlic paste.
4.Shape the Kebabs
Take a portion of the mixture and shape it into kebabs. You can form them into round tikkis (patties) for pan-frying or cylindrical shapes if baking.
5.Cook the Kebabs
Pan-frying: Heat oil in a tawa or skillet over medium heat. Place the kebabs on the hot tawa and cook each side for 5-7 minutes until golden brown and crispy.
Baking: Preheat the oven to 180°C (350°F). Place the kebabs on a baking sheet lined with parchment paper and bake for 7-8 minutes until golden and fully cooked.

6.Serve
Serve hot with mint-cilantro chutney or your favorite dip.
Tips:
For extra flavor, add finely chopped cilantro or mint to the mixture.
These kebabs go well with naan, paratha, or as a snack with chutney.
