Ingredients:

Bambino vermicelli: 1 cup

Oil: 1 tablespoon

Mixed vegetables (carrots, peas, beans, etc.): 1 cup, chopped

Onion: 1 small, chopped

Salt: to taste

Red chili powder: to taste

Water: 1.5 cups

Cumin seeds: 1.25 teaspoons

Mustard seeds: 1.25 teaspoons

Curry leaves: a few

 

 

Instructions:

1.Heat the oil:

In a large pan, heat 1 tablespoon of oil over medium heat.

2.Add spices:

Once the oil is hot, add the cumin seeds, mustard seeds, and curry leaves. Sauté for a minute until they start to splutter and release their aroma.

3.Sauté onions and vegetables:

Add the chopped onion and mixed vegetables to the pan. Sauté for 3-4 minutes until the onions are translucent and the vegetables are slightly tender.

4.Add vermicelli and spices:

Add the roasted vermicelli to the pan along with salt and red chili powder. Mix well to combine all the ingredients.

5.Add water:

Pour in 1.5 cups of water and bring the mixture to a boil.

6.cook the vermicelli:

Once boiling, reduce the heat to medium-high and cook until the water evaporates and the vermicelli is cooked through (about 5-7 minutes). Stir occasionally to ensure the vermicelli doesn’t stick to the pan.
