Mediterranean Chicken
This Mediterranean Chicken recipe is my absolute favorite when I want a quick yet fancy dinner. The creamy roasted red pepper sauce feels like a warm hug, and the sprinkle of fresh basil at the end adds such a fresh aroma—it’s like bringing the flavors of a coastal Mediterranean village straight to the table!
Ingredients:
Boneless chicken – 400-500g
Olive oil – 4 tablespoons
Red bell pepper – 1, roasted and peeled
Italian seasoning (or oregano) – 2 teaspoons
Garlic – 1 tablespoon, finely chopped
Salt – 1 teaspoon, or to taste
Red chili powder – 1 teaspoon
Fresh basil – thinly sliced, or ¾ teaspoon dried basil
Black pepper – 1 teaspoon
Feta cheese – 2 tablespoons (optional)
Cream – ½ cup
Instructions:

- Marinate the Chicken
In a bowl, combine a small amount of garlic, some Italian seasoning, and the chicken. Marinate for 10-15 minutes.

- Prepare the Red Pepper Paste
In a blender, combine the roasted red bell pepper, remaining Italian seasoning, olive oil, garlic, salt, and black pepper. Blend until you have a smooth paste.
- Cook the Chicken
Heat a pan over medium heat and cook the marinated chicken for 6-8 minutes on each side until it’s light brown and cooked through. Transfer the chicken to a plate and cover to keep it warm.
- Prepare the Sauce
In the same pan, add the red pepper paste and stir over medium heat for 2-3 minutes. Pour in the cream and continue stirring until the sauce thickens to a creamy consistency.
- Combine and Serve
Add the chicken back to the pan and let it simmer in the sauce for 2-3 minutes. Sprinkle fresh basil on top and add feta cheese if desired.

- Serve
Serve hot, with sides like couscous, roasted vegetables, or a simple salad for a balanced Mediterranean meal.
Tips:
For a richer flavor, garnish with olives or sun-dried tomatoes.
If you prefer a spicier kick, increase the red chili powder or add a pinch of crushed red pepper flakes.
