1.Prepare the Rice

In a pot, combine 1 cup of water and 1 cup of milk.

Add the rice, red chili powder, salt, black peppercorns, cloves, cinnamon, and black cardamom.

Bring to a boil, then reduce the heat to low and simmer until the rice is cooked. Set aside.

2.Sauté the Onions and Spices

Heat 2 tablespoons of oil in a separate pan over medium heat.

Add black peppercorns, cloves, cinnamon, black cardamom, cumin seeds, and biryani masala (if using).

Once the spices start crackling, add the sliced onions and sauté until golden brown.

3.Prepare the Chicken

Add the chicken pieces to the pan with the sautéed onions and spices.

Cook on high heat for 5 minutes, stirring occasionally, until the chicken browns slightly.

Reduce the heat, cover the pan, and let the chicken cook for another 10 minutes or until tender.

4.Assemble the Biryani

In a thick-bottomed pan or pot, arrange a layer of cooked rice.

Add a layer of the chicken masala on top.

Repeat the layers until all the rice and chicken are used, finishing with a rice layer on top.

Squeeze the lemon juice over the top layer.

Sprinkle a little water for added moisture.

5.Cook on Dum

Cover the pan tightly with a lid or foil to trap the steam.

Cook on low heat for 10-15 minutes to allow the flavors to meld.

6.Garnish and Serve

Garnish with fried onions, fresh coriander, or mint leaves if desired.

Serve hot with raita, salad, or pickles.
