Ingredients
For the Marinade:
- Chicken (boneless or with bone): 500 g
- Salt: To taste
- Red chili powder: 2½ tsp
- Bhuna jeera (roasted cumin) powder: 1 tsp
- Turmeric (haldi): ¼ tsp
- Garam masala: ½ tsp
- Coriander powder: 1½ tsp
- Garlic paste: 1 tsp
- Ginger paste: 1 tsp
- Thick yogurt: 1–2 tbsp
- Tomato ketchup: 2 tbsp
- Black pepper: ½ tsp
- Lemon juice: 2 tsp
For Cooking:
- Oil: 3 tbsp
- Fresh coriander: 2 tbsp, chopped
- Curry leaves (optional): 6–8
Instructions

1.Marinate the Chicken
In a mixing bowl, combine all the marinade ingredients: chicken, salt, red chili powder, bhuna jeera powder, turmeric, garam masala, coriander powder, garlic paste, ginger paste, yogurt, tomato ketchup, black pepper, and lemon juice.
Mix everything well to coat the chicken evenly. Cover and let it marinate for at least 1 hour (or up to overnight for deeper flavor).

2.Cook the Chicken
Heat 3 tablespoons of oil in a large pan over high flame.
Add the marinated chicken pieces in a single layer and fry for 5 minutes on high flame until golden brown.
Cover the pan, reduce the heat to low, and cook for 10 minutes. Stir occasionally to prevent sticking.
Flip the chicken pieces, stir, and cook for another 5 minutes on low heat.
3.Finish with Fresh Herbs
Add chopped fresh coriander and curry leaves (if using) to the pan.
Fry for 2–3 minutes to release the aroma of the herbs.

4.Serve
Serve hot with naan, roti, or steamed rice. It also pairs beautifully with a fresh salad or a side of yogurt for a cooling contrast to the spicy flavors.
