This recipe, lovingly called “Dadima’s Cake,” carries the charm of a grandmother’s touch—simple ingredients, classic methods, and a taste that brings back childhood memories. The airy texture from whipped egg whites and the delicate sweetness make it perfect for tea-time or as a base for layered desserts.

Ingredients

Eggs: 6

Powdered Sugar: 1.5 cups

Oil (Refined): 1 cup

Maida (All-purpose flour): 2 cups

Baking Powder: 2 tsp

Milk: As required (to adjust consistency)

Instructions

1.Separate the Eggs:

Carefully separate the egg whites and yolks.

2.Beat Egg Whites:

Using a hand mixer or whisk, beat the egg whites until stiff peaks form. This gives the cake its airy texture.

3.Incorporate Yolks:

Gently add the yolks into the beaten whites and beat until well combined.

4.Add Sugar and Oil:

Gradually add the powdered sugar, beating continuously to dissolve it fully.

Pour in the oil and beat until the mixture becomes smooth and well-incorporated.

5.Fold in Dry Ingredients:

Sift together maida and baking powder to remove lumps and ensure even distribution.

Gradually fold the sifted dry ingredients into the wet mixture. Use a spatula to gently fold; avoid overmixing to retain the airy texture.

6.Adjust Consistency:

If the batter feels too thick, add a little milk (a tablespoon at a time) to reach a smooth, pourable consistency.

7.Bake:

Preheat the oven to 180°C (350°F).

Grease and line a baking tin. Pour the batter evenly into the tin.

Bake for 50 minutes or until a skewer inserted into the center comes out clean.

8.Cool and Serve:

Let the cake cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve as is, or dust with powdered sugar for an elegant finish.

This cake is pure nostalgia for me—it’s the kind of recipe that fills the house with warmth and sweet aromas, drawing everyone to the kitchen. It’s a versatile base for layered cakes or can be enjoyed plain with a cup of tea. If you want to make it extra special, top it with fresh cream and fruits, or serve with a dollop of vanilla ice cream!
