Baked Chicken Drumsticks with White Sauce
This recipe takes me back to family gatherings where we’d all dig into these juicy drumsticks, slathered with creamy white sauce. My personal touch is adding a pinch of smoked paprika to the white sauce—it elevates the flavor and ties it beautifully with the baked drumsticks. Ingredients:
Chicken drumsticks – 16 pieces
Hung curd – 3-4 tablespoons
Eggs – 2
Salt – to taste
Black pepper – 1 teaspoon
Oregano – 1 teaspoon
Mixed spice (garam masala or any preferred mix) – 1 teaspoon
Lemon juice – 2 tablespoons (or juice of 2-3 small lemons)
Paprika – 1 teaspoon
For White Sauce:
Butter – 1 tablespoon
Maida (all-purpose flour) – 1-2 teaspoons
Milk – ¼ cup
Instructions:

1. Marinate the Chicken
In a large mixing bowl, combine hung curd, eggs, salt, black pepper, oregano, mixed spice, lemon juice, and paprika. Mix well, then add the chicken drumsticks, coating them thoroughly with the marinade. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

2. Prepare to Bake
Preheat the microwave at 200°C (392°F) for 10 minutes, and then preheat the oven to the same temperature for 10 minutes.

3. Bake the Drumsticks
Spread the marinated chicken drumsticks on a baking tray lined with parchment paper. Bake in the oven at 200°C (392°F) for 20 minutes or until golden and cooked through.

4. Make the White Sauce
In a small saucepan, melt butter over medium heat. Add maida and cook until it turns a light pinkish color, stirring constantly to prevent lumps. Gradually add milk, whisking continuously until the sauce thickens to a smooth consistency.

5. Serve
