Ingredients:

3-4 boiled potatoes, diced

2 tablespoons oil

2 teaspoons cumin seeds

2 teaspoons ginger, finely chopped or grated

2 teaspoons green chili, chopped

Salt, to taste

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon dry mango powder (amchur)

Fresh coriander, chopped, for garnishing

 

 

Instructions:

1.Heat the Oil:

In a pan, heat 2 tablespoons of oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.

2.Add Aromatics:

Add the finely chopped ginger and green chilies to the pan. Sauté for 1 minute until the ginger turns slightly golden.

3.Cook the Potatoes:

Add the diced boiled potatoes to the pan. Sprinkle salt, turmeric powder, red chili powder, and dry mango powder (amchur) over the potatoes. Toss everything together so that the potatoes are well coated with the spices.

4.Sauté:

Cook the potatoes for 3-4 minutes, stirring occasionally, until they are lightly crispy and heated through.

5.Garnish and Serve:

Sprinkle fresh coriander on top and serve hot. These Masala Aloo make a perfect side dish or can be enjoyed on their own, just like I did growing up – with a steaming bowl of rice or as a quick snack on their own.
